Cellar: After harvest, the grapes are laid in a single layer in crates and left to dry in the shade for one to two months, using a method similar to appassimento. Fermentation begins spontaneously in open-top 220-liter barrels with no additives, pumps, or filters used at any stage. The wine is then aged outdoors in glass jars for 40–60 days before being bottled unfiltered, with only a small dose of sulfur added.
